Green Bean-Scallop Casserole

 

 

 

Scallops - 2    12 oz frozen or 1 - 1 1/2 pint fresh

1/4 cup chopped onion

2 Tbs. butter

1 can cream mushroom soup

1/2 cup milk  (if lot scallops, use more )

1/2 tsp. curry powder

1 cup shredded cheese (I use cheddar)

1 lb. can French style green beans- drained

1 cup soft bread crumbs

2 Tbs. melted butter or margarine

 

Simmer scallops in boiling salted water 3-4 minutes, drain

Cook onion in 2 Tbs. butter till tender, not brown

Add soup, milk, curry, dash pepper, 1/2 cheese

Stir till cheese melts

Slice cooked scallops crosswise and combine with drained green beans in 10 X 6 X 1 1/2 baking dish.

Pour soup mixture over

Sprinkle with remaining cheese, bread crumbs, + 2 Tbs. butter

Bake in 425 degree oven  for 15 - 20 minutes

 

Variations:

2 cans green beans and no scallops makes nice dish.
