Mesclun Salad with Stilton and Toasted Walnuts

 

          1/4 cup sherry vinegar

          2 tablespoons minced shallots

          Salt, pepper to taste

          1/2 cup canola oil

          1/4 cup walnut oil

          1 pound mesclun salad

          1 cup toasted walnuts

          Stilton cheese

 

          Whisk together vinegar, shallots, salt and pepper. In a slow stream add the oils. Set aside.

 

          Toss together greens, walnuts and dressing. Serve with Stilton cheese.
