Sweet Potato Fluff

 

1 lb. Or 13 oz can cut sweet potatoes

1 cup sugar

2 large eggs

3 /4 cup milk

dash salt

¼ stick oleo – (or butter)

1 teaspoon Vanilla

 

Drain potatoes – place in mixer, add butter (melted) beat well, add sugar and eggs.  Beat well add all other ingredients. ( do not shake strings from potatoes on mixer ) pour into greased casserole.

 

Topping

 

1 cup light brown sugar mixed with ¼ cup flour then add ¼ stick melted butter and a cup chopped pecans - This makes a crumbly mixture.

Sprinkle over top of potatoes.  Bake at 350 degrees about 45 minutes or until firm in the middle
