Yellow and Green Squash

w/ Cheese Topping

 

 

2 oz Butter, melted

1 large Onion, chopped

Saute - when onions are clear, add -

 

3 - 3 1/2 lbs. Yellow and Zucchini Squash, cut into cubes

               (3 Zucchini - 6 Yellow)

1 teaspoon Salt

1 teaspoon Lemon Pepper

1 teaspoon minced Garlic (dry)

 

Saute until squash are cooked, but still crispy.

Place in 8 X 12 Pyrex dish.

 

                        Cheese Topping

 

1 cup Sour Cream

1/4 cup Mayonnaise

1/2 cup Parmesan Cheese

4 oz Velveeta - cut into cubes

 

Pour Cheese sauce over vegetables.

Sprinkle 3 - 4 tablespoons grated Sharp Cheddar Cheese on

top.

 

Bake in 350 degree oven for 20 minutes or until cheese melts.
